SOUTHERN COMFORT BBQ SAUCE
1 cup maple syrup
1 cup molasses
4 cup ketchup
½ cup lea and perrins Worcestershire sauce
1 cup honey
½ cup sweet soy
2 Tbsp BBQ rub
3 Tbsp granulated garlic
2 cup Southern Comfort
salt and pepper to taste
Method
Add all ingredients to large saucepot. Bring to a boil and let simmer for ½
hour.
SOUTHERN COMFORT SALSA
2 each avocados, small dice
2 each pineapples, small dice
2 each mangos, small dice
1 bunch cilantro, chopped fine
6 each tomatoes, chopped fine
1 large yellow onion, small dice 1 large red onion, small dice
1 large cucumber, small dice
½ cup oil
½ cup rice vinegar
1 each lemon
1 each lime
1 tsp sugar
½ cup Southern Comfort
salt and pepper to taste
Method
Mix all ingredients and let marinate overnight.
Clean pork tenderloin by cutting off silverskin.
Season with salt and pepper and either cut into 2 inch thick medallions or
grill whole.
Serve over the salsa and pour BBQ sauce over pork.
