Serves 6
Ingredients:
1 Pound Cake
2 C. Sugar
1 C. Southern Comfort
2 C. Berries (mixed seasonal)
Parfait or other glasses
1 Qt. Whipped Cream
Fresh Mint to Garnish,
Directions:
In a bowl add Sugar, ½ Cup of the Southern Comfort, then stir until blended.
Add Berries, and gently toss, until berries are covered. Cut up Pound Cake
into small pieces; moisten with ¼ C. of Southern Comfort.
Place into glasses in several layers, Pound Cake, then Berries, Southern
Comfort Whipped Cream, repeat, until the glass are full, leaving a parfait
or layered effect. Garnish the top with the Southern Comfort whipped cream.
Garnish with the mint. Southern Comfort Whipped Cream: In a mixing bowl add
the Heavy Cream, and Sugar, whip until almost tight, slowly add ¼ Cup of
Southern Comfort, continue to whip until the cream peaks.
