PARSNIP AND PEAR GUACAMOLE
 

4 each parsnips, peeled and small dice
2 each pears, peeled and small dice
3 each avocados, peeled and small dice
1 large Vidalia onion, diced
¾ cup Southern Comfort
2 cups heavy cream
2 tbsp chili powder
2 tbsp cumin
1 tsp cayenne pepper
1 tbsp lemon pepper
2 each lime, juice
1 each lemon, juice

Method

In medium sauce pan sauté onions till they are translucent. Add parsnips and pears and cook till soft. Deglaze with Southern Comfort. When flames extinguish, add heavy cream. Let liquid reduce until all vegetables are very soft. Add powdered seasonings and blend till the consistency of mashed potatoes. Remove from heat and let cool. Stir in avocados and juice of the lemons and limes. Check seasonings and adjust with salt and lemon pepper.
