FLASH FRIED LOUISIANA SOFTSHELL CRABS WITH A SOUTHERN COMFORT AND TASSO CREAM SAUCE
 



2 cups all purpose flour
2 tsp granulated garlic2 Tbsp lemon pepper
3 Tbsp rosemary and thyme, chopped fine
2 Tbsp salt and pepper, or seasoning salt (Tony Sachere's or Lawrys)
blend well

EGG WASH
4 each eggs
1 cup milk
blend well

SOUTHERN COMFORT AND TASSO CREAM SAUCE
1 cup onions, small dice
1 cup green peppers, small dice
1 cup celery, small dice
½ cup pimentos
3 Tbsp sugar
1 cup honey
1 cup Southern Comfort4 cups heavy cream
juice of 1 lemon
2 Tbsp Hickory Seasoning
1 Tbsp granulated garlic
1 bunch green onions, sliced fine

Method

Saute onions in med sauce pot till translucent and slightly caramelized. Add celery and peppers and pimentos.
Saute until all are soft. Add sugar, honey, and Southern Comfort.

Let reduce.

Add heavy cream and let reduce by half.

If necessary, tighten sauce with 1 cup of blonde roux.

Finish with green onions and check seasonings.

Place one softshell in flour, then eggwash, then back in flour. Fry in 350 degree oil till golden brown.

Serve hot topped with sauce.
